会席料理スタイル:柿碗 Kaiseki Cuisine Idea: Persimmon Dish
October 17, 2013: 季節 Seasons10月17日に上山田温泉旅館熊井の総会で旅館晴山でお世話になりました。その懇親会の会席料理で一つ吃驚したのは柿の一品でした。柿の中身を取って調理して、くり抜かれた跡で出した。晴山の調理長が考えてはりますね!
On October 17th, the Kamiyamada Onsen Ryokan Association held its annual meeting at Ryokan Seizan. During the banquet afterwards, I was surprised by one of the dishes of their kaiseki dinner. They took a persimmon, scopped out the inside and seasoned it, and served it in the persimmon shell it came out of. What a clever idea!
台風後の秋の青空 Blue Autumn Sky after the Typhoon
September 18, 2013: 季節 Seasons先日の台風の影響で千曲川がまだ茶色ですが、
代わりに台風後の空が本当に真っ青です。
周りは少しずつ秋の色がついてきています。亀清旅館の近所のザクロの木は実がこんな綺麗な色になりました。
これからは信州の紅葉のシーズン。紅葉情報をこれから提供したいと思っておりますので、お楽しみに♪
The typhoon from the other has passed, but its effects are lingering. The Chikuma River is still swollen with muddy water. On the other hand, we have had the most beautiful clear blue autumn sky.
Slowly but surely, colorful signs of fall are starting to show. Our neighbor's pomegranate tree is full of bright orangish-red fruit. Soon the fall colors will start showing up in the trees here in Nagano. As the season progresses, I will give updates on the fall colors here in this blog. Stay tuned!

September 1, 2013: 季節 Seasons9月となりました。この上山田では、葡萄狩りの時期です。娘の美咲ちゃんに中島農園に連れてきました。亀清旅館のお客様に採りたての葡萄三種類(三色)をこの時期にデザートとして出しております。
葡萄狩りを体験すれば、
葡萄って何種類があるか、
どうやって栽培しているか、
畑は動物から守るのにどういう工夫しているか、
農家さんはどこまで手をかけているか、
葡萄畑の空気はどれだけ新鮮か、
色々と勉強になります。

September has come along. Here in Kamiyamada, that means grape season!
I took our daughter Misaki to Nakajima Orchard to pick some grapes for our guests. This month, Kamesei Ryokan's dessert at dinner time is a plate of 3 varieties (3 colors) of fresh-picked grapes.
If you go grape picking, the experience gives you insights into a world you otherwise wouldn't know, such as:
How many varieties of grapes there are,
How farmers in Japan use to grow them,
The extensive techniques used to keep animals away,
How much labor the farmers here apply to growing the grapes,
How much cleaner the air is in a grape orchard
Come and experience grape picking yourself, here in Kamiyamada. I would be happy to take you to an orchard!
今年の初巨峰♪ First Grapes of the Season
August 27, 2013: 季節 Seasons上山田農家「クラウン農園」の飛田さんが顔を出してくれた。顔と葡萄を出してくれた。巨峰がもう、出始まりました。普段は9月に入ってからですが、今年は夏に晴れの日が多かったから早く出始まりました。
飛田さんから葡萄を頂いて、私はあまりにも嬉しくてその場で一房を食べてしまいました。その新鮮で美味しい事!
毎年のこの時期の楽しみ: 採りたての葡萄。大体9月末までは葡萄狩りも出来るし、お土産で買って帰るのも出来るし、郵送・通販販売も可能です。お問い合わせをどうぞ。
One of our local orchardists, Tobita-san from Crown Farm, paid us a visit. He brought some 'kyohou' grapes, the big purple grapes that are a specialty of Nagano. Normally the grape season starts in September, but with this year's hot summer the fruit has started to mature early.
When Tobita-san dropped off the grapes, I was so excited I sat down and ate one whole bunch all by myself. Wow, were they good! Fresh and sweet!
So come to Kamiyamada and enjoy picking and eating fresh grapes while staying for a soak in our onsen. The season should run through the end of September.
☆早松☆ このシーズンの初松茸 First Matsutake Mushrooms of the Season

市場から直送、このシーズンの初めての松茸!
Chef武井を見たら、さすがに笑顔でした。やはり、お客様に美味しい材料の料理を出すのは板長の一番の楽しみ。
以前は亀清旅館で「松茸プラン」を提供してきましたが、今年の松茸はまだまだ安定していない。市場(と相場)の状況を見て、出来次第またそのプランを始まりたいと思っております!
There here again -- Matsutake Mushrooms!
Practically worth their weight in gold, matsutake are a delicacy here in Japan. We just got our first delivery of these rare morsels direct from the wholesale market. You should have seen the smile on Chef Takei's face -- it's obvious he loves being able to serve the guests these exquisite mushrooms.
In the past, we at Kamesei have offered a Matsutake Cuisine plan. The supply isn't steady enough yet this year, but as soon as it is we will start offering that plan again!

August 14, 2013: 季節 Seasonsハッピー七夕♪ Happy Tanabata!
August 8, 2013: 季節 Seasons今年は頑張って、亀清旅館の玄関を七夕の為に飾りました。
息子を山へ連れて、長い竹を切ってきて、
地元の文房具屋さんへ行って、ピカピカな飾りをたくさん買って、
梯子を上って飾りつけしました。
7日のお客様が大喜び。
せっかく頑張って飾ったから夏休み中のお客様の皆が楽しんで頂けるように残したいと思ったら、
次に日や「七夕が終わったからもう片付け」と。
えっ?ックリスマスツリーの様に一か月ぐらい飾るのじゃないの?もったいない!
来年は当日ではなく、もうちょっと早めに飾らんとアカンですね。まあ、とにかく、ハッピー七夕♪
This year, I went all out and decorated Kamesei Ryokan's entrance for Tanabata. That's Japan's Star Festival, the one night of the year when the weaver princess Vega can meet her prince, Altair, across the Milky Way. It's tradition here to festoon some bamboo trimmings fronds with colorful, shiny decorations and write wishes to attach to the bamboo.
I took our oldest son up to the mountain to cut some bamboo,
brought it back and set it up at Kamesei's entrance,
went to a local shop and bought all kinds of shiny decorations,
got out the ladder and attached them all to the bamboo.
Our guests were delighted with the colorful Tanabata decorations.
I was thinking we could leave up the decorations for the rest of summer vacation for all of our guests to enjoy. But the next day, everyone told me I had to take them down. I guess it's not like a Christmas tree that you can leave up for a month.
Next year I'll have to put out the Tanabata decorations earlier!
しなの風呂の百日紅に夏の花 Summer Flowers on our Shinano-buro Bath's Spicebush
July 18, 2013: 季節 Seasons春は桜や水仙等でお花のイメージが強いです。しかし、夏も花が咲く気はちゃんとあります。その一つは百日紅。
亀清旅館の貸し切り露天「しなの風呂」に百日紅の木があって、見てみたら花が咲き始まった。
この夏は亀清の家族風呂に入りながら、夏の花も楽しめます♪
Usually flowers are associated with spring, such as cherry blossoms and daffodils. But summer has its flowers, too, such as the spicebush.
Kamesei Ryokan's private outdoor bath "Shinano-buro" has a spicebush tree in its garden. When I checked up on it, I was pleased to see it has started to blossom.
This summer, Kamesei Ryokan's guests will be able to enjoy summer blossoms while soaking in our luxurious Shinano-buro family bath!
