雪景色も良いし、桜や杏の花の時期も良いし、新緑の爽やかさも良いし、真夏の濃い緑でホッとするし、中秋の名月と収穫時期も感動的だし、

しかし、戸倉上山田温泉の一番カラフルは紅葉かな?今はちょうどピークです。周辺の紅葉写真を提供します。

Our onsen town Togura-Kamiyamada is beautiful when covered in snow,
and the soft pinks of the cherry and apricot blossoms in early April are beautiful,
the vivid light green that spring brings is a sight to behold,
and the deep green of summer is so soothing,
while the golden browns and yellow of the harvest season contrast so warmly with the light of the harvest moon.

But Togura Kamiyamada's most colorful season is undoubtedly that of the fall leaves. Right now the hills around a ablaze in oranges and reds and yellows. And our onsen town is spotted with the colors of autumn.

新・鼠大根 特に辛い! New Crop Nezumi Daikon -- Super Hot!

この戸倉上山田周辺でしか食べれられないお料理「おしぼりうどん」の商売として初めて出したお店、古炉奈さんに久しぶりに行ったら、今年の鼠大根がちょうど入っていました。

鼠大根は辛味なので、擂って、絞って、その汁におうどんを付けて食べるのはおしぼりうどんです。採りたての鼠大根で初めて食べましたが、余計にからい!しかし、美味しくて止められない!

古炉奈のオーナーが私に新鼠大根を1作れました。亀清旅館のChef武井に渡したら、お客様の味噌汁に使ってくれました。擂ったのではなくて、薄く切った。その方は辛くない。

古炉奈さんは色んなB級グルメの雑誌や漫画に出ていて、お客様は遠くから来ているようです。戸倉上山田にお越しになれば、ぜひ食べてみてください。

Here in our onsen town Togura-Kamiyamada, there is a type of cuisine that you can only eat in this area: "Oshibori Udon". We take a really, really spicy daikon radish called "nezumi daikon", grate it, squeeze ('shibori') the juice out, and use it for dipping the fat udon noodles in.

Oshibori udon has been around for many, many moons as a dish that locals make for themselves to eat. The first restaurant that started serving oshibori udon to customers was Corona. I stopped by there for lunch and happened to time it for the arrival of the new crop daikons. Freshly picked daikons are even spicier than normal -- quite a shock to the senses!

Pictured are some of the stubby nezumi daikon with their distinctive mouse-like tails. In fact, 'nezumi' means 'mouse'. Freshly grated, their spiciness is potent!

Corona's owner gave me one to take back to our inn. Our chef used it for our guests' miso soup the next morning -- chopped, not grated (less spicy that way).

If you visit Togura-Kamiyamada Onsen, you would be remiss not to try our local specialty, oshibori udon.

亀清旅館の一番最初に作った露天風呂、「100年風呂」の雑木林庭が紅葉してきました。

元々秘湯っぽい露天風呂が秋に風情がなお良いです。

紅葉見風呂の時期になりました。

Kamesei Ryokan's first outdoor bath, the "100 Year Bath", is putting on a show of fall colors now.

The bath has always had a hidden feel to it tucked into a small garden behind our inn. Now with the trees' leaves changing colors, it is taking on a magical feel.

Now is the time to enjoy a Koyo-mi (fall leaves-viewing) onsen bath!

この秋の天気は寒くなったり温かくなったりのせいか、今年の紅葉はあまりぱっとしない。しかし、お客様の送迎のついでに上山田温泉の裏にある城山を車で登りました。そうすると、桜の赤からイチョウ真っ黄色まで、紅葉らしい葉っぱでした。

これが秋だ!と思いました。葉っぱは色変えずに落ちるのが一番面白くない秋の終わり方。城山のこの色を見れて、納得しました。秋が終わり、冬の初めはどうぞ。

This fall, perhaps due to the the wild temperature swings, the leaves haven't been showing their normal brilliant autumn colors. But I took some guests up to Joe Mountain, the hill behind our onsen town of Togura-Kamiyamada, and was treated to beautiful colors -- from the red of the cherry trees to the bright yellow of the ginkgo tree.

Now this is Autumn! It's dissappointing when fall ends with the leaves falling without changing color. After seeing today's autumn leaves at Joe Mountain, I feel fulfilled. Now I'm ready for fall to end and winter to come.

戸倉上山田温泉の周辺の山や、温泉街の中の木がやっと紅葉し始まりました。亀清旅館の裏の中央公園の桜と他の木が黄色・オレンジ色になってきました。

これから我が宿の庭の木も紅葉してきます。そうすると、「100年風呂」の露天風呂が「紅葉見風呂」になります。秋の色を見ながら温泉に入れて、最高!

Fall Colors have finally started to come to Togura Kamiyamada Onsen. The hills around are turning beautiful shades of orange and red, and the trees down here in our town are starting to change color, too. The leaves on the cherry trees in Chuo Koen, the park behind our inn, have turned yellowish-orange.

And the maple trees here in Kamesei's gardens will start to turn color, too. That means our guests will get to enjoy the fall colors as they soak in the onsen water.

亀清旅館の客室「松風」を、地元のお蚕さん生産ルーツを記念して、「紬」と言うテーマに少しずつ変えています。その重要な一部は庭。

庭師の岡田さんに庭を作ってくれた時に「お蚕さんを表現する様に」と言うリクエストをしました。それに従って、桑をもちろん、そして繭をイメージする白い花も植えてくれました。

今は白い花の2種類がちょうど咲いています。
*シモバシラ(霜柱)
*シロバナシュウメイギク(白花秋名菊)

楽しいお庭になっています。

Kamesei Ryokan's guestroom "Matsukaze" is being remade around a silk theme in honor of this area's silk manufacturing roots. When our gardener Okada-san made this room's garden last year, we requested he design it around a silk theme. Besides a mulberry plant, he also planted flowers with white blossoms to give an image of silk coccoons.

Right now 2 of those flowers are in bloom:
*Japanese anemone (Anemone japonica)
*Shimobashira (Keiskea japonica Miq.)

Such an entertaining garden.

亀清旅館の玄関の松の木の下に萩が毎年に出てきます。この頃は綺麗な花が咲きます。

もう時期、この葉っぱは紅葉になって、また違う表現になります。旬の変更が早い! その日、その日を楽しまないと駄目ですね。

We have a patch of bush clover under the pine tree in front of our inn here at Kamesei Ryokan. It's flowers are in bloom right now.

Before too long, the leaves will all change in a vivid display of autumn color. The seasons change so fast! You have to really enjoy each and every day as they come.





甘酸っぱい紅玉りんご: 採りたてで美味しい! Tart Kogyoku Apples -- So Good Right Off the Tree

長野に来てからの毎年の楽しみは紅玉りんごです。長野はリンゴの王国で、色んな種類がありますが、私が一番好きなのは甘酸っぱい紅玉です。そしてリンゴ畑で取り立てで食べたら、一番酸っぱくておいしいです。

紅玉はアップルパイに会うので、この時期は亀清の板長が紅玉入りのアップルパイをデザートで出しております。

10月が終わったら紅玉も終わって、今度はふじりんごが出始まります。今はその甘酸っぱい紅玉のチャンスです。

亀清旅館・上山田温泉から車で5分でりんご農園は沢山あります。私達が付き合っているのは下記です:

紅玉の気が段々と少なくなっている中で、この農家の両方ともちゃんと守っています。数量が限られているのでお早めに!

Back in the States, I grew up with granny smith apples. I always loved their tart flavor. Here in Nagano, we are fortunate to have 'kogyoku' variety of apples. They are tart, just like granny smiths. Kogyoku season is one of the things I always look forward to since moving to Nagano.

Kogyoku is sort of a heritage variety of apples, and is slowly being replaced by newer varieties that are more disease resistant and travel better. But for me, their tart taste makes kogyoku my favorite, and it doesn't get any better than picking one from a tree and eating it right then and there.

Just a quick 5 minute drive from our onsen town, Togura-Kamiyamada, are several apple orchards. At one, Crown Farm, English and German is spoken. The Tobita's still have a few kogyoku trees as well as lots of the new varieties. The kogyoku season runs through October but keep in mind, availability is limited. From November, the orchards shift to their mainstay fuji apples.

In honor of the apple season, our chef here at Kamesei is baking apple pies for our guests for dessert. Right now he is adding kogyoku apples into the mix -- their tartness providing just the perfect touch.








北アルプスが既に白い Snow Already on the Northern Alps

松本への出張の帰り、
高速道路から撮った写真。
北アルプスは既に雪で白くなっていました。
寒い訳だ!
さっすが白い馬(白馬)!

'Hakuba' means "white horse". The mountain is living up to its name!

戸倉上山田温泉の周辺の田んぼは稲狩りが始まりました。田んぼによって稲が風で倒されている場所もある。稲狩りのタイミングは農家の皆さんの悩み。いっぱいまで育ちたいけど倒れたら作業の効率が悪い。

田んぼはいくら見ても私は飽きない。その表情に色んなストリーがありそう。一年通せばその表情の進み方で「旬」の感覚が分かります。

この稲狩りの時期も深いストリーがありそう。
